Lacking alot of the detail attainable at the atomic level, case in point; creating a mini nuke to explode in someones face. Or he can make matter unstable, but it would still exist (say a solid wall becomming jelly), while if you make the atomic structure unstable, things can completely vanish when they break apart at the atomic level.That said... the concentration needed to manipulate a large number of atoms at once is going to be insane, vurses the relatively simple ease manipulating matter itself would have, comparatively speaking.
